Tapping at them again toggles their membrane.

The squirrel travels through the level by drifting. When their membrane is open, they float around in the direction of the wind. When they close it, they fall. Be careful, though. It is possible for them to lose forward momentum. When this happens, they get stuck.

You must alternate between opening and closing to help them keep moving. To gather all the acorns, you must help them drift to the right locations. Timing is critical. Pay attention to where the acorns are and any obstacles in your way.
